• 4pcs 雞蛋 eggs • 25g 植物油 vegetable oil • 25g 無鹽奶油 unsalted butter • 70g 低筋麵粉 low-gluten flour (Cake flour) • 70g 牛奶 milk • 52g 細砂糖 caster sugar • 15g 蜂蜜 honey • 1/2匙 香草精 vanilla extract

✅ 烤箱150°C預熱,烘烤55~60分鐘。 Preheat the oven to 150°C and bake for 55 to 60 minutes.
🔹 烤箱預熱至150℃,在16×16公分的方形烤模中鋪上烘焙紙,準備一瓶熱水,並將所有食材稱量好備用。 Preheat oven at 150℃, line up parchment paper in the 16×16 square tin, prepare a bottle of hot water, and have all the ingredients measured.
1️⃣ 將植物油、奶油和牛奶加熱至40-45℃。 Heat vegetable oil, butter, and milk to 40-45℃ in a pot.
2️⃣ 將低筋麵粉篩入步驟1️⃣中,攪拌均勻後加入蛋黃,拌至順滑,再加入蜂蜜和香草精攪拌均勻。 Sieve flour into the mixture from step 1️⃣, mix well, then add egg yolks and stir until smooth. Add honey and vanilla extract and mix evenly.
3️⃣ 打發蛋白,分三次加入細砂糖。打至濕性發泡後,繼續以低速打發1-2分鐘。 Beat egg whites and add sugar in three batches. Whip until soft peaks form, then continue beating on low speed for another 1–2 minutes.
4️⃣ 取1/4蛋白霜加入蛋黃麵糊中,用打蛋器拌勻後倒回蛋白霜中繼續攪拌。臨近拌勻時可用刮刀從底部翻拌,確認是否攪拌均勻。 Add 1/4 of the meringue into the yolk batter and mix well with a whisk. Then pour the mixture back into the remaining meringue and continue mixing. Before finishing, use a spatula to gently fold from the bottom to ensure everything is evenly combined.
5️⃣ 將麵糊倒入烤模中,再放入一個較大的烤盤,注入約2公分高的熱水。放入預熱好的烤箱,以150℃烘烤55-60分鐘。 Pour the batter into the prepared tin and place it in a larger pan. Add about 2 cm of hot water to the larger pan. Bake in the preheated oven at 150℃ for 55–60 minutes.
